As a treat the kids and I decided to bake some cookies.
My daughter, while rifling through the spice drawer chose ginger.
When she was little we used to go through the spice drawer and open each jar so she could breathe in all the wonderful smells.
I immediately reached for my quinoa cookbook and found this recipe.
It called for one egg but since Noah can't have eggs I used an egg replacement.
(It would be my first time baking without eggs)
They turned out great!
I felt like 'mom of the year' seeing Noah's face after his first bite. He loved them.
