To keep up with my 'super-mom' persona I have started juicing fresh vegetables. Once a day I gulp down a concoction of carrots, celery and beets. I am amazed with the colour of beets - a rich pinky/wine hue. I find inspiration on my cutting board when I am finished chopping those ball-shaped roots.
I really like the beet juice against the honey coloured cutting board. It reminds me of a watercolour painting. The combination of carrots, celery and beets is to improve digestion. I have been juicing for about a month and a half and have to say I feel the difference.
